Happy almost-Cinco de Mayo! This is always one of my favorite holidays – I love the bright colors, the margaritas, and especially the food. This Cinco de Mayo cheese board is a twist on the standard favorite. I take a couple of Mexican cheeses (manchego and queso fresco) and surround them with salsas, fruits and vegetables, and warm tortillas.
I think most people celebrated over the weekend, but if you need a quick appetizer for tomorrow, this is an easy one to set out and the possibilities are endless. You can add cooked chorizo (I used a Spanish chorizo here), tortilla chips, even more salsas, a bean dip, queso fundido – just use your imagination! I love having a spread of appetizers as a meal, and between the cheeses, salsas, and tortillas, this is definitely one that can serve double duty as both.

Ingredients
- Cheese:
- Mexican manchego
- Queso fresco
- Crema
- Meat:
- Spanish chorizo
- Fruit and veggies:
- Sliced radishes
- Limes
- Mango
- Salsas:
- Pico de gallo
- Avocado salsa verde (mix in a diced avocado with salsa verde)
- Tortillas, corn and flour
- Tortilla chips
Instructions
- Arrange all foods on a large platter and serve.

You are the queen of mexican food!! Of course you would come up with the coolest Cinco de Mayo appetizer ever. I really love this idea! I’m bummed that I didn’t use Cinco de Mayo as an excuse to make this but it would be awesome for a summer BBQ too, I think.
