Over the weekend I was having the hardest time trying to figure out what to make. I waffled with ideas and just kind of came up with nothing. Then I thought of a BLT subbed with a fried green tomato for the T and I was sold.
When I went to the store, though, there was not a green tomato in sight. I looked in 3 different stores and none of them had even one. So, while in the produce section, my mom, who is visiting for the weekend, saw these gorgeous yellow tomatoes, and they felt firm enough to fry, so we thought that we’d go ahead and try them in the sandwich.
What really makes this sandwich though is the mayonnaise. Do not skip it! The basil really complements all of the components and just ties everything together. That, and the fried yellow tomato, really takes the standard BLT to the next level.
Bacon, Lettuce, and Fried Yellow Tomato Sandwiches with Basil Mayonnaise
1 yellow tomato, make sure it’s firm
1/4 cup cornmeal
1/4 cup flour
1 egg, beaten
Salt and pepper, to taste
Oil, for frying
1/4-1/2 cup mayonnaise
4 big leaves of basil
4 slices of bread
Lettuce
6 slices of bacon, fried
Begin by slicing the tomato into 4 thick slices, about 1/2 inch thick. Then, prepare the breading station. In one bowl or pie plate, combine the cornmeal and the flour and season with salt and pepper. In another bowl or pan, place the beaten egg in. Take the tomato slices and first dip in the beaten egg and then into the cornmeal and flour mixture. Repeat with remaining tomato slices. Heat enough oil just to cover the bottom of a skillet over medium high. When the oil is ready, place the tomatoes in and fry on each side until golden brown, about 4 minutes a side. Drain and season with salt. Set aside.
Meanwhile, combine the mayonnaise and basil in a food processor, or chop the basil very finely and mix into the mayonnaise. Season with salt and pepper to taste and set aside. The mayonnaise can be made in advance and left in the fridge until ready.
To assemble the sandwiches, toast the bread. Spread some of the mayonnaise on the bottom half and top with lettuce. Place the bacon and two of the fried yellow tomatoes on top. Spread more mayonnaise on the other slice of bread and close the sandwich. Repeat with the other sandwich and serve.
