If I wasn’t able to convince you to make the peach and/or pineapple vinegars last week, then this is the week I’m determined to do it. This peach basil collins (another cocktail from my brother, Rich) is so good – dare I say, better than my favorite, gin & lemonade. They’re sweet without being cloyingly-so and are definitely refreshing. While I love a fun cocktail anytime of year, July seems even more fitting to imbibe since my mom, dad, and I all have birthdays in the month. A cocktail like this is the best way to celebrate.
While Rich and I used vanilla simple syrup for drinks, you can also use basil simple syrup, or even a combination of the two. We’ll be posting the recipe for basil simple syrup in the coming weeks – so depending upon how much you love basil, you may want to sneak a little more of that flavor in this drink. And, if you can find them, try to get the freshest peaches you can find for the vinegar, it’ll really make the difference.

Ingredients
- 1 1/2 oz gin
- 1 oz peach basil vinegar
- 1/2 oz vanilla simple syrup, you can find my recipe here
- 1/2 lemon, juiced
Instructions
- Pour the ingredients into a tall collins glass filled with ice. Stir until combined. Serve immediately.
